Lovely sausage, wonderful sausage*…

I eat a lot of Spam*, courtesy of Big Brother. Courtesy of Big Brother, I’ve got enough Spam squirreled away to get me through quite a long stretch before I’m reduced to eating tourists. But I do confess sometimes a guy likes something a bit spicier.

Remember that three pounds of sausage?

Dice some up real small and it goes great in Spammo Classico. You just need to reverse the process a bit…

After toasting the fresh-sliced bread (one side only,) fry up the diced sausage until it’s nice and brown and the grease is sizzling nicely…

Spread it out on the griddle. Whip up some eggs with a fork and pour them out on the sausage…

Then slap your bread down before the eggs set up, untoasted side down.

Once the eggs set up cut them into thirds, tuck the ends under the toast…

…and you’re good to go. Hot and savory, maybe a little more spicy than you’d want every morning but it goes great with coffee.

    Well shucks, never thought of the bread on top of eggs and cutting it up in the pan thing – love it! Other treats can be added to the eggs – hot peppers, onions, tomato, chocolate chips. Thanks
