I did not know this until Claire mentioned it, but yesterday I missed commemorating an anniversary really quite significant here at the Secret Lair: Spam turned 80 years old.

My Spam stores are severely depleted because Big Brother went on a vacation cruise that turned into a 3-month health crisis. I’ve been hoarding my remnant.
Whether served as Spammo Classico or just cubed with potatoes and onions then fried with whipped eggs and served with crack sauce, Spam has been a staple of this hermit’s diet since Big Brother started sending me monthly care packages some years ago. I’ve always enjoyed it but didn’t eat it much because at $2.50 at the dollar store it’s simply too expensive. But I’m informed that, now that BB and his lovely wife have finally made it home alive and safe if not entirely well, a resupply is on its way. Yay!
Let us celebrate the greatness that is Spam*!

Spam-onions-potatoes-eggs, can’t get a finer meal anywhere. Or Spam and fresh homemade from scratch buttermilk cornbread. If the eggs, potatoes and onions are home grown it’s even better. And maybe a tomato. There are two cans in my pantry. Life is good.
I’ve always kept copious quantities of spam in my long term food storage supplies. I like the spicy hot, Portuguese sausage, Teriyaki, Turkey and Jalapeno flavors best. There’s a scratch and dent grocery store across the state line in North Carolina where the wife and I go to shop about once a month. They often have cases of the “flavors” at half what you would pay at Walmart. Riverrider did a post about spam, and he had purchased a special spam slicer. I got one too, and it’s the greatest invention since sliced bread. I am supposed to cut way back on salt, but I figure I can eat some spam now and then. If TEOTWAWKI looms up some day, I’ll have more to worry about than salt consumption, and can feast on spam!
